Tarragon Oyster Mushroom (Pleurotus euosmus) is a very rare oyster mushroom, thought to be found mainly in Britain and associated with Britain’s wild mushroom heritage and ancient woodlands. With a distinctive trumpet shaped cap, as its name suggests, its smell and taste resembles herb tarragon making it one of the finest tasting oyster mushrooms available.
According to Watling & Gregory, the Tarragon Oyster mushroom is closely related to Pleurotus ostreatus and is generally considered a form or variety of P. ostreatus, but differs in the strong smell of tarragon.

EDIBILITY
Stem is soft similar to Phoenix/Mediterranean oyster, not woody like a Florida oyster. Fries up beautifully. A light texture with a light hint of tarragon. Shelf life is 5-7 days. Caps are fragile and edges will crumble, use care when handling. The taste is excellent.
